- 3 Tbsp. I Can't Believe It's Not Butter!® Spread
- 3/4 cup 2% milk
- 3/4 cup all-purpose flour
- 3 large eggs
- 1 Tbsp. granulated sugar
- 2 cups mixed berries
- 2 cups Breyers® French Vanilla Ice Cream
- 1 Tbsp. confectioners sugar
1Preheat oven to 400°. Put I Can't Believe It's Not Butter!® Spread in oven-proof 12-inch skillet and place in oven.
2Add milk, flour, eggs, and granulated sugar to blender. Process until smooth. Pour into heated skillet. Bake until puffed and golden, about 20 minutes.
3Top pancake with berries and Breyers® French Vanilla Ice Cream; dust with confectioners sugar. Garnish, if desired, with fresh mint.
