ITALIAN ICE CREAM SANDWICHES

MAKE-AHEAD: Ice cream mixture can be made up to 3 days ahead, covered and frozen.

INGREDIENTS

  • 1 orange, zested
  • 1/2 cup pistachios, toasted, coarsely chopped, divided
  • 2 ounces dark chocolate, finely chopped (about 1/2 cup), divided
  • 1 tsp. ground cinnamon
  • 4 cups Breyers® Natural Vanilla Ice Cream, slightly softened
  • 8 small brioche rolls, halved, warmed

INSTRUCTIONS

  1. In a large chilled bowl, fold zest, 1/4 cup pistachios, 1/4 cup chocolate, and cinnamon into ice cream until blended. Cover and freeze for about 1 hour, or until firm.
  2. In a small bowl, mix remaining pistachios and chocolate. Sandwich 1/2 cup of Breyers® Natural Vanilla Ice Cream between warm brioche halves. Sprinkle pistachio mixture along ice cream edges and serve immediately.
