Ingredients
- 2 Tbsp. butter
- 1/2 cup sugar
- 1/2 cup fresh squeezed orange juice
- 1 Tbsp. grated orange peel
- 2 eggs, lightly beaten
- 1 cup fresh blueberries
- 2 medium fresh peaches, peeled and chopped
- 2 cups Breyers® Original Extra Creamy Vanilla
- Whipped cream
- 1 orange, cut into 4 wedges
- 4 mint sprigs
- 4 rolled cookies
Directions

Melt butter in double boiler over medium heat. Whisk in sugar, orange juice and peel and cook, whisking occasionally, until sugar is completely dissolved. Remove about 1/4 cup sauce into small bowl and let cool slightly. Slowly pour cool sauce into eggs, whisking constantly. Slowly pour egg mixture into orange juice mixture, stirring constantly. Cook until mixture thickens, about 3 minutes. Remove from heat and let cool.

Arrange blueberries and peaches in 4 bowls. Top with Breyers® Original Extra Creamy Vanilla, then drizzle with orange sauce. Garnish with whipped cream and orange wedges.

Insert 1 mint sprig in top of each cookie to make ''palm trees''. Press into Ice Cream. Serve with remaining orange sauce.
