1/2 cup all-purpose flour
1/2 brown sugar
1/3 cup unsalted butter, melted
1 tsp vanilla extract
1/4 tsp baking soda
pinch of salt

Preheat your oven to 350°F (175°C).
In a large bowl, combine oats, flour, brown sugar, melted butter, vanilla extract, baking soda, and a pinch of salt. Mix until well combined.
Scoop the dough onto a lined baking sheet, spacing cookies about 1.5 inches apart. Flatten slightly and bake for 8-10 minutes, or until golden brown. Allow them to cool completely.
Take one cooled oat cookie and layer a generous scoop of Breyers French Vanilla on top. Place another oat cookie on top to create a sandwich.
Place assembled sandwiches on a baking tray and freeze for at least 1 hour until firm.
