- 60 vanilla wafer cookies, divided
- 1 container (1.5 qt.) Breyers® Natural Vanilla Ice Cream
- 1 tsp. grated lime peel, divided
- 1 lime, thinly sliced
Line a 9-inch springform pan with parchment paper. Carefully place 14 cookies around the sides of the pan and 14 cookies on the bottom of the pan.
Spoon Breyers® Natural Vanilla Ice Cream into a large saucepan and melt over low heat. Stir in ½ teaspoon lime peel. Pour 1 cup over the cookies on the bottom of the pan. Place the pan in the freezer for 30 minutes to firm up.
Layer 12 more cookies in pan, then pour 1 cup of Ice Cream mixture over cookies. Continue alternating between a layer of 12 cookies and 1 cup Ice Cream mixture until done, ending with the Ice Cream mixture. Freeze overnight.
Remove from freezer. Remove from pan; top with lime slices and sprinkle with remaining ½ teaspoon lime peel. Cut and serve immediately.
